Spicy and Flavoursome Chicken Nuggets

One day I just decided to make some chicken nuggets for the children as these were really healthy however i added some spices to them and they tasted exactly like KFC Popcorn Chicken! However it was an experiemnt which I didn't record what spices I put in but I have tried to and tried and have finally got the balance I need and there aren't even 14 spices!





Ingredients:

250g Chicken Breast Fillets (cut into nugget shaped + sized pieces)

3 slices of bread
1 egg (beaten)

50g Flour
1/2 tbsp gorund pepper
1 teaspoon ground garlic
1/2 teaspoon  of ground parsley
1/2 teapoon of ground rosemary
salt


Method

1. Pre-heat oven to 200C/400F, lightly flour a baking tray and get a small plastic cooking bag. Then add spices and chicken to bag and shake well so most of the spices after take out of bag and rub in any left over spices onto the chicken.

2. Blitz bread in food processor half a slice at a time, until the bread is now breadcrumbs. Then place flour, bradcrumbs and the beaten egg in sepreate bowls each. Dip chicken in flour first, (patting of any excess flour). Then dip in egg (shaking off any excess egg but making sure the egg has fully covered the chicken). Finaly dip into the breadcrumbs, rolling the chicken around in the crumbs helps the breadcrumbe cover the chicken fully. Place each nugget on the floured baking tray and place in oven for 12-15 minutes until golden brown. (Make sure chicken is cooked through by cutting open the biggest nugget. The nugget should be hot and white)

3.Serve nuggets!

Because these nuggets do not require any frying they are also a very healthy treat at the same time!

Foolproof Meringue with Rasberry Sauce

Foolproof Meringues With Cream and Raspberry Sauce


At Christmas I like to make desserts and this year I made some meringues. But these meringues were so melt in the mouth and has a flavour reminiscent to candy-floss. They were so good!


Ingredients:

For Meringue:
3 egg whites

50g Caster Sugar
25g Granulated Brown Sugar (you can do all caster sugar but for a better flavour and texture granulated sugar is recommended)


For Sauce and Cream Filling:
220g Raspberries
85g Icing Sugar (you may need some extra depending on the tartness of the raspberries)
250ml Double Cream

NOTE: Your bowl must not be wet and to make sure use kitchen paper or a tissue and just wipe the bowl all over even if it is dry.


Method:


1. Pre-heat oven to 150C. This is important. Line the baking tray with greaseproof paper and a layer of butter, this will make the meringues have the melt in the mouth texture. In a large bowl, whip up egg whites until they form stiff peaks. Then you can mix in (with an electric mixer) the sugar. Some people say you should fold it in but I find the sugar never really evenly spreads out when folded and a lot of air is gone when folded as it takes longer. Mixing in the sugar makes the recipe foolproof. The mixture should be glossy.

2. Pipe the glossy mixture onto the greased baking tray as shell shapes. Make sure there is an even number at the end as two shells make one meringue. Put in oven for 45-55 mins. Turn meringues the other way round halfway through for an even bake.



3. Leave meringues to cool. 10 minutes before serving whip up cream until it doubles in size and becomes more stiff. Then put raspberries and icing sugar in a food processor. Blend until well mixed (make sure to taste, if it is too sour add more icing sugar). Scoop one spoon of cream on one meringue, pour one spoon of raspberry sauce on top and add the other shell of the meringue on top making a meringue 'sandwich'.


The sauce can be used on top of ice-cream as well as a fun sundae sauce!

Banana-Chocolate Milkshake

Banana-Chocolate Milkshake
This is a quick and easy pick me up milkshake that everyone should try and is ready and takes less than 2 minutes to make







Okay so here are the ingredients:


50g Nutella or a good chocolate spread (it is meant to be 35g for each person drinking but a more chocolatey treat is nicer sometimes!)
One banana (one banana for each person drinking)
Half a pint of milk (1/2 a pint for each person drinking)

2 scoops of ice-cream (2 scoops per person)


Recipe:

Chop banana into thin slices. Then add milk, banana and ice-cream and blend in a blender. After add the nutella and blend one more time! There you go a simple milkshake!

Almond Slices

Almond Slices

What makes the recipe really nice is the addition of Special K, it adds a nice texture to the dish. Also ussing milk powder instead of milk gives the dish a very filling experience meaning you will be satisfied (or maybe not...they can become addictive!)




Ingredients

3 Eggs (beaten together)
90g Ground Almonds
180g Milk Powder

200g Caster Sugar
100g Butter (Make sure its melted!)
40g Special K or Your preferable cereal (crushing it into pieces makes it easier to work with)
Tin of Glace Cherries
Handful of Flaked Almonds

Icing Sugar




1. Pre-heat oven to 180C/Gas Mark 4 and line a 7-9" square cake tin
Put ground almonds, milk powder, cereal and sugar in a bowl. Then add the melted butter and beat well until the mix is slightly moist all over.

2. Add eggs all in one go (don't worry your mix wont curdle!) and beat until it is smooth. (If it is not smooth just add 25ml of milk to loosen the mixture up). Then pour mix into the cake tin and prinkle with the flaked almonds. Put in oven for 40-45 mins or until golden brown all over.

3. Once out of oven leave to cool. While cooling slice the glace cherries into halves. Once the 'big cake slice' has cooled, slice into long strips  and add three glace cherries ontop. Dust with icing sugar.


There you have it! A simple recipe in less than three steps! I hope these turn out nice for you as well, you can spread rasberry jam ontop of your indivual slice for a fruitier flavour!
